1: A Substitute Rarely Does Everything the Original Did

An ingredient like an egg or butter often serves multiple jobs at once — binding, moisture, structure, flavor. A single substitute usually covers one of those jobs well, not all of them, so know which function actually matters most in your dish before picking a swap.


2: Small Substitutions Can Still Change Cooking Time or Temperature

Swapping one ingredient for another sometimes shifts moisture content or density enough to affect how long or how hot something needs to cook. If a substitution changes the result, check the bake time and oven temp before blaming the ingredient itself.
